Easy 20 Minute Ground Turkey Laab Gai: A Healthy Thai Dish

Created by Suren Chiu, RDN, LDN

Thai food is unique and fun because of the burst of flavor. Laab gai is a cold dish, a lot like a chicken salad but with a tangy sweet flavor. This is one of my favorite quick recipes since it takes minimal effort and tastes amazing.

Obviously, after you finish cooking it. It will be hot. You can still enjoy it. But when you refrigerate it, you don’t have to reheat it to eat. You can just eat it cold. Don’t worry. It tastes just as good.

Ground turkey laab gai served in lettuce wraps with rice, garnished with cilantro and red onion.

Ground Turkey Laab Gai

Servings: 4

Time: 20 minutes

Ingredients

  • 2 Tb vegetable oil
  • 1 lb ground turkey (90% lean 10% fat)
  • 1/2 tsp sugar
  • 2 Tb fish sauce
  • 2 limes, juiced
  • Red chili flakes (to desired level of spicy)
  • 1/2 medium sized red onion, julienne
  • 1/4 cup cilantro, chopped
  • lettuce or rice (to eat with)

Directions

  1. Prep all vegetables, make sauce with sugar, fish sauce, and lime juice. Set all ingredients aside.
  2. In a saute pan, pour vegetable oil and turn on to medium heat. Once the pan is hot, add in ground turkey. Cook until fully done into small pieces.
  3. Add red chili flakes, start with a sprinkle. Cooking the chili flakes will increase the spice intensity.
  4. Add red onions and sauce mixture. Stir for a couple minutes until onions start to soften.
  5. Add cilantro and remove from heat. Stir in cilantro until it is well mixed.
  6. Enjoy your ground turkey laab gai with rice or in a lettuce wrap.
